    Overall I would say yes, noting that La Sirene themselves claim their own house yeast is constantly mutating as local wild yeasts are incorporated. Half my Vic case swap beers will be with this yeast, first harvested 5 plus years ago, so will hopefully get some feedback re. Character.

    I would think the two would not correlate....aerobic cell growth and anaerobic fermentation in terms of final gravity. Always taste my starters but only to check for obvious infections, as above. With un hopped malt extract, it's like dilute orange juice, not beer I want to drink.

    I think there is a massive difference between discussing/explaining an analytical method, and how to make moonshine. Anyone ever suggested distilled water as a base for a pilsner? Pitchforks at the ready!

    Why would the brisket be effed? Surely you would defrost it prior to cooking in any case? I think the yeasts will be fine too...if you don't want them post to me!

    In my experience, some of that bitterness will drop out with your yeast, plus temperature will impact the perceived bitterness. Unless completely undrinkable I'd cold crashing and keg it as is, worst case scenario give it to your mother in law to drink at Christmas

    Cutting keg with sparkling water

    I do it in the glass 50:50 for beer batter (kids prefer it that way) and drink half of what I mix up. Tastes like a stock standard light beer to me....I think it can work, but high likelihood to take it further than you plan to. I'd probably go no more than a litre in a full keg.

    Share your staple malt recommendations...

    Agree with the observations re. Gladfield pilsner and dms, only time I've detected it. Latest batch I increased my yeast pitch and have no issues but definitely think it generates more than other pils malts I have used.

    I've brewed with crused grain that old no issues (was sealed up pretty good).
