I just got hold of some Falconers flight from Ross, 10.5%AA . It might be suitable? It is a blend of a number of hops and designed for North Western American IPA's. Going to put an IPA together Sunday or perhaps sooner if I can skive off work Wednesday or Thursday... :icon_cheers:

Spent the arvo at the beer festival in the rocks. Got in early grabbed a table, ended up with too much sun, the burleigh hef was quite tasty. Holgate did quite well also, great arvo, particularly so early. The Hop dog Belgian lawnmower was also memorable..

Geez these go quick... Droppped in to Chippendale Cellars yesterday, sold out... Called a place in Surry Hills, one in the fridge and none out back. Hoping to get some more in next week.... (might be dreaming) Dropped into St Peters today, sucess, grabbed a couple. Tasty. The fella there reckons...

The Alexandria Hotel is the best spot to watch afl in Sydney. Owned by an ex swans player etc. two huge screens out back, with commentary etc.. Just outside of the city. 10 min walk from Redfern station. Beer option limited though. I stick with coopers on tap.

I usually cool in the Pot overnight and not had infection issues. Not saying it is the best practice but it works :D

Tanga, I know I posted in another thread about having made I did a kits and bits dark ale with white rabbit re-cultured yeast. I didn't see your question re same til quite recently, didn't get back to you blah blah... It wasn't really the same, but tastey with caramel type chewy flavours all...

I recultured from the dregs of two Dark ales stubbies a couple of months back. Used it for a kits and bits dark ale It was great.

Yeah, my temp control is basic, it consists of a soft sided 30l edit/cooler type bag which I put freezer blocks into. Anyway I use one of those small fish tank thermometers from hong kong / china. I put a small groove next to the grommet for the airlock where I run the cable. Pretty basic, but...
