    Don't stress which one too much, the small difference can be offset in the calibration if needed. I've got one of mine setup using a small headphone jack, I meted the first one soldering it though. I don't have an electronics type soldering iron. Pick which ever one appeals to you the most.

    I prefer the XLR plugs, they have more contact area and hence a lower resistance. Also give a nice chunky fitting so easier to solder, and grab hold off. You can get panel mounts or inline setups.

    It's not a stc, it's one of those crappy style so it wont switch between heat and cool automatically, this one is also 12vdc not 220vac, it also has one of those crappy metal temp probes.

    I cold crash all my beers for a week, I can fit 3 fermenters in the fridge and it drops it down no problems.

    On my 3v, when my rims element died, i tried the hermit with a single kettle element to do the full job. Best i could get is 1/3 degree per min.     Not flow rate, I run the pump on full regardless of the grain. It's just less grain take up less space, so I use more water to get the water height back up.
