Here is the Wheeler recipe for Guinness Extra Stout
Ale Malt 80%
Flaked Barley 10%
Roast Barley 10%
I use this recipe and do not have any of the "ashey, asringent flavours" described above.
I have successfully made a lot of cheese (not mozzarella) and have never bothered to test for PH.
I heat milk to 32C and add cultures. Wait 40 minutes and then add rennet. Test if set after 40 minutes and then process with rest of process.
I finally have lift off with my controller.

What was the preboil wort volume?
Do you use brewing software, this will also help you keep track of what is happening during the brew.
