    I live in Mt Victoria and agree you need a temperature controller to regulate the temperature of your fermenter. also a cheap yoga mat from Big W wrapped around your fermenter will help with keeping the temperature stable in conjunction with the heat belt and controller.

    If you must have a refractometer then you also must have a hydrometer or when you measure fermenting wort with a refractometer you must know your Original Gravity and consult a chart to find out the true gravity of the fermenting wort.

    You will destroy the fresh apple taste if you boil the juice. I just ferment using enough of the cider yeast.

    You do know that if you use a refractometer to measure gravity of fermenting wort you have to use a conversion table to find the correct gravity. Alcohol distorts the refractometer reading.

    How was your measuring container calibrated? Did you actually weigh the full container to verify its accuracy?

    Did you reduce the juice by boiling? This is not a good idea as it will give a stewed fruit flavour to the cider.

    FG too high?

    What are you using to measure your FG? Hopefully a hydrometer. A refractometer does not accurately measure FG.You need to use a correction table.
