    What is wrong with 75%? Consistency is more important.

    You will find the grain will absorb water during mash which it will not give back up , so you will also lose some volume to that. You coud start at 1.00 litre per Kilo of grain and adjust as your note the difference after a few brews.

    The only reason for laying down champagne or wine is if they are sealed with a cork. The cork will dry out and shrink if the bottle is upright, it will remain wet if the bottle is laying down.

    You need to mature the cheese at a reasonably constant temperature between 10C and 15C so is difficult to do without a fridge or a good cellar.

    Casey's Beer at Station Bar Katoomba

    Went to the Station Bar yesterday. tried Casey Beer Lounge Badlands Dark Ale on Handpump Young Henry Real Ale Rocks Brewing Milk Stout Pat's beer was as good as if not better than all of them. A very balanced easy drinking beer with character.

    The only problem ,if it is a problem, is theat when I visit Pat at St Marys ,it is usually an hour later before I leave. There is usually something intersting to talk about, sometimes beer related, sometimes not. I really admire his perserverance and patience to see this project trhough.
