    Absolutely. Just don't use it on its own as an indication of how to get to target mash pH.

    Fusels I would relate to poor yeast health or hot temp. I’m assuming you’ve got temp down pat so maybe yeast was just cactus.

    You can cover, keep in the fridge and use later (months later). If paranoid, add some water, stir and bring to boil before use.

    I know exactly how much it goes up because I've done it, multiple times. You're right - if going from sacch to sparge, it won't go near 80.

    DBS sparges with boiling which will bring the temp of the grain bed itself up. One way of mashing out is to add enough boiling water to bring the bed to 78+ (which 76 sparge will not). Different intentions, similar process, similar results.

    Very dubious about its efficacy. 6.8 is presumably your water pH? Mash pH is what is important. Water (esp mineral content) can affect mash pH but water pH, in and of itself, is fairly unimportant.

    It's not necessary in the slightest although I do it because I usually carry out multiple steps and want to fix the profile. Actual mashout temp should be around 78-80

    DBS recipe looks good* but depending on how close you want to the real thing, I'd suggest the coopers yeast is a must. *@dbs - coopers suggest 21 ibu for their mild.
