    Vic 2017 Xmas Case Swap

The infected bottle that Wiggman brought to the last swap (Belgian golden strong from memory) was delish. Not all infections taste bad!

Victorian 2017 Xmas Case Swap - Recipe

Haha! I've got a grand total of 25g left in the freezer! I'm tempted to use them with the 80 or so grams of cascade flowers from last season I've got left too. Should be nice.

Victorian 2017 Xmas Case Swap - Recipe

Best American Amber I've ever made had a large cube hop addition of fresh home grown Victoria flowers...surprisingly dank with 'dark'(?) citrus overtones. Was very nice.

    Vic 2017 Xmas Case Swap

Well it's all I've got that can be bottled by swap day! Hopefully we'll make it to 24 this time round... Edit: should have said this earlier. The quality of beers over the last umpteen swaps I've been part of has been absolutely top notch. The swap beers are always fantastic.

Any ideas on what this hop could be?

You will be impressed with home grown cascade. It is fantastic.

    Vic 2017 Xmas Case Swap

Soooo I'm not going to have time to brew and ferment something out for this swap, but what I do have is a couple of better bottles of aged sour that are good to go (one pale one dark with rye). Very happy to share, but is everyone happy with champagne bottles? These are beers that can be aged...

FS, Trade, Barter, Free etc @ Vic 2017 Xmas Case Swap

Free keg tags at the last swap? I'm fairly confident I wouldn't have refused them. Now that I've been slandered I'm sure to refuse them at the Christmas swap! :-)

    2018 Hop Plantations

Hops going nuts here. Victoria is about 8 foot high, closely followed by Mt Hood, Cascade and the wild Otway Goldings. Chinook has just emerged from the ground, but is bent for global domination and will no doubt hit the top of the ropes first.

    Berliner Weisse

Hey JD, I've done both before. The difference (to my palate anyway) is that I've found kettle soured beers produce a really clean, but simple lacto sourness. Very refreshing and enjoyable. Quick and the boiling means you don't need dedicated sour gear. I've found long and slow souring (with a...

The 2017 Melbourne Grain Bulk Buy

Massive thanks to MJ, CB and the others who made the bulk buy possible. Was a shame to not be able to make Saturday. HUGE thanks to JB for picking up my malt and babysitting it for me!

Vic 2017 Xmas in July Case Swap

Checked the gravity of my lager-stout tonight. Down to 1.020. First 10 days were at 10C and the last five days have been at 18C for a D-rest. Turned the heat off and will let it free fall for a few days and will check the gravity over the weekend. If stable, I'll give it 2-3 weeks lagering...

Kettled Sour beers. Where do i start?

Good luck! It's a slippery slope. Make sure you taste relatively frequently, the sourness can get too much quite quickly.

    2018 Hop Plantations

Cheers mate. I'm sure they'll go great guns. My wildlings are yet to make an appearance. I've got some cuttings from last year in a pot though that are just poking through. Victoria is still going nuts, fuggles, cascade and goldings are all starting to emerge. No sign of Mt Hood yet which...

    2018 Hop Plantations

Cheers for the plug and hope your wildlings are still going strong. I didn't get enough flowers from them last year to brew with, but they're certainly an interesting hop. Threw a lot of lemon to my palate. Here's an article with a bit more background on the wild hops growing in the otways for...

Vic 2017 Xmas in July Case Swap

Massive thanks to JB for babysitting my cube since the swap. Bottled a pale Aussie lager tonight and dropped the stout directly onto the cake (S-189). Am interested to see how it turns out. Smelled fantastic coming out of the cube.
