    Haha of course! If we adopted that approach, we'd never start home brewing :P I would only attempt for my own engineering-geek reasons. Refilling the CO2 tank is an inconvenience more than an excessive cost.

    Strictly speaking, the probe shouldn't be going directly into your pot anyhow. Best practise would be to put a thermowell in, then put the probe in the thermowell. You should use one of those bulkhead fittings, then the tapered thread will be in the right application and happy:

    There's nothing wrong. It's a BSP tapered thread, designed to seal with PTFE tape.

    More results. So I took off a plastic disconnect and attached a barbed stainless one. I ran out of hose clamps so a press fit over the barb was holding it on.     I would be highly surprised if a home brewer EVER needed to replace seats on a ball valve. Then, the cost of the new seats is likely to be similar to a new valve anyhow. At work, we throw them in the bin instead of rebuilding them - it's so rare they need any attention.

    Ball valves aren't sanitary so yeah, the idea is that 3-piece gives you a way to service the valve without having to disrupt the pipework. We really need some small butterfly valves to hit the homebrew market...

    temp control wiring question (not an STC)

    Not particularly odd that the cooling switch is higher rated - a refrige compressor has far higher starting current than running, whereas resistive heaters are much the same. So a compressor with a 10A running current could easily draw 16 at startup.

    DIY Hopback using a KK Beer Filter Housing

    I wouldn't worry about leaching - I don't filter much anymore but when I did, it was fine with hot water sanitising. It's polycarbonate, not PET or HDPE.
