I have cooled 2 beers via immersion chilling in 12 years. All my beer's have a 60 minute and some have flameout hops and then package in a cube , leave the elements on @ 90 OC if needed whirlpool. Then transfer. Lager or Ale's all have turned out very nice.

I put a removable dial thermometer on the Brewzilla. A few fittings and connected it between the riser tube from the pump to the (sparge arm tube).
When the mash is complete, I then attach it to test the sparge water and later to the chiller. Very handy!

Allow time between temp rests, it is not instant to go from one temp to another. Heat water , mash in , mash out, sparge and boil. Package wort. Takes me 5-6 hours to do a double batch, 2 x 22 litre cubes.
Mash your grains in two batches and pitch the yeast on first batch. Then make the second batch and add to the first. You now have an all grain EB. It is easy to do even if you don't have large pots/vessels for a full batch.
