    Great way to sanitize and store bottle gun during your process. I have no cold storage for the bottles, I have a small shed in the back yard that gets so hot in summer. Crash chilling after ferment and allowing the beer to heat up again just feels wrong for me.

    Pouring pressure is at 12-15 PSI,1.2 - 1.5 Bar approx. If you carb at 12PSI and then reduce the pressure the beer loses dissolved Co2 as you reduce the liquid volume and then it foams.

    Your software should get your mash Ph correct. If you don't correct the sparge water you will lower the Ph of the total wort, check Ph preboil?

    If your calcium is around 50ppm and your happy with the sulfate to chloride ratio let it ride. I would double check your mash temperature, if high you are in Alpha territory your beer will finish with a higher gravity. I do use a yeast nutrient.
