Which syrups? Pale, red or darker dubbel?

Actually the Golden and D-90,1lb of each. Some Caramunich and a smidge of carafa, so quite red. :)

Hey, did you sneak a little taste of the syrups before you poured them in? If so, what were they like?

Well, one pack of each - being 1lb sachets. Yeah I did taste. The golden was halfway between honey and golden syrup, with a very subtle fruitiness and toffee flavour. The D-90 was very much a dark caramel, slightly burnt figgy flavour. They are susceptible to crystallisation after being opened which was surprising - I guess not totally inverted.

I've made great clear syrups using alanine (from ditness supplement stores) in an oven at 90-95°C. Fruity and nicely inverted.
I haven't dared go darker, but if I did I'd use leucine/iso-leucine. Hopefully time would be enough rather than just temperature. And don't tell MHB...
