    Apparently after repeated tellings, a good yeast can ferment out in 4 days, yes 4 days, did I mention 4 days.

    Now mine was finished in 5, but it could have been 4. however I left it 2 weeks still because I was unsure and it still had a couple of points to go. But turns out it didn't.

    Lets see how this next batch goes that started yesterday :)

    Now that's a challenge! A bit harder as I currently bottle :( If I put myself in a 3 week induced coma after I bottle that is still considered within a 7 day timeframe?

    Not uncommon in this brewery, i tend to take a hydrometer sample after 1-2 days. This sample gets left out with the hydrometer still in, should ferment out in a day, then works as a forced ferment (especially with summer temps) then I know where i'm going to finish.

    I have captured wild yeast in my brewery via leaving a hydrometer sample out, smelt like a Belgian saison.
