    You're right on the leak. But thinking about the 1 degree you've got it at. Just check the temps are correct for the method you talked about. The colder the beer is, the more CO2 it will absorb. If you overcarbonate the beer then put it back to serving pressure, the CO2 is going to bubble back...

    RecipeDB - Cinnamon & Vanilla Cider

    I've made one of these recently. It took about 2 weeks to ferment down to 1.010 (18 deg C) at which I added a few camden tablets to stop the fermentation. It took about 2 days to get any decent activity and I used ample yeast starter. So I wouldn't be too worried yet.
