Thanks everyone for all the responses, i'm going to put together a recipe shortly and try to tackle this and report back on results. In future I plan to upgrade to temp controlled fermentation but still starting out.
Yeah I've been playing around with the setting but kind of gave up and have just gone with a basic assumption of the following:
Use 15L of strike water, mash 60 mins then boil for 60 mins add hops and fingers crossed I get somewhere around 11L post boil....
