I looked into this a bit when I started...
Essentially you need a bag that will hold your grain and like others have said, the weave needs to be not to fine and not to coarse...
The bag also needs to be made of a material that can handle near boiling temperatures.
Beyond that its all personal...
+1 for through the door, and you don't need to cut the seals! If you start that way its quick and easy and you can change your mind down the track...

I have bought maze from them - they stock (or at least used to) a few different forms - not just polenta.
