    @Yankinoz - I imagine it was temp controlled as it was in a commercial brewery, and it was also open fermented.

    I was watching a Youtube clip (Chop and Brew I think) and the guy they were filming (a US craft brewer) started gently stirring up his yeast on day three with a long spoon. He said yeast tend to get "lazy" and stirring them gets more contact with sugars to drop the FG and clean up off flavors...

    Sounds like they will still keep the IBU's low with only late hop additions, not going to want to "challenge" anyone - like Tooheys did with their "Darling Pale Ale".

    Bottling and storage - cold garage

    It will definitely affect carbonation at that cold. You need to keep your bottles at fermenting temp for at least three days (Say 18-22C). They way I do it in place them on the heat pad I use to ferment with and cover them all with a blanket. After that they can be stored in a cold garage no issue.

    I have never found a home brew shop owner that is respectful of online forums and the ideas that come from them. Whenever I try and discuss an idea that I have got from AHB they schoff and sneer.

    I always thought it was the Coopers yeast. The stuff inside the lid is not refrigerated, under weight and old. It is also NOT the same yeast they use in their commercial beers (that strain can't be dried). Just swapping the lid yeast for US05 in their pale ale totally eliminates twang in my...

    Hey I had this too, but luckily I discovered it whilst still in the shop as I only wanted to buy one. I ended up just picking up a single one, but some had about 6 or 7 stuck together. I felt like I would want to jump into AG as quickly as possible too, but have since found there is much to be learnt with extract, hops and steeping grains (I don't use kits).
