    All of the above. I've found, when bottling lagers, stash them away and don't touch for at least 3 months. It makes a big difference.

    Years ago there used to be these things called newspapers. Amazing things they were. You could read what was printed on them and then use them for all sorts of stuff. Stuff being the operative word. Wrap your bottles up, put them in what ever box you store them in and stuff more newspaper around...

    I do live close to a couple of bottle shops. Coopers Sparkling Ale is OK beer, but I only really wanted 6 for the yeast. I think it was better years ago, but then again, wasn't everything?

    Bad batches or my mistake?

    If you're using unsanitised rain-water, then it's really just good luck that any of your brews are not infected. Get up on your roof and lick the surfaces were the birds party up. See if you get crook.(joking) It's easy to sanitise water. Get it up to temperature and cube it.

    Bottle Storage.

    I use both stubbies and bigguns. Bigguns go in wine boxes 6s and stubbies go in 32 lt plastic storage boxes that got many years ago at the old $2 type shops. The plastic storage boxes hold 24 and just work well with cleaning and storage.

    All grain over carbonation

    I reckon you might have a wild yeast issue. In my early days I had the odd bottle gusher. It never tasted off or anything, just annoying. I only bottle in glass now and nuke the bottles with sod-per, then phos-acid prior to bottling. Can't remember the last gusher, so that's gotta be a good thing.

    Did not WEAL have health issues? Things can sometimes go south at a rate of knots. His political comments infuriated me but I loved his posts. People come and go, they always will.     Seems like you're on top of all the basics. Except about the proper storage of brewing ingredients. If you are confident of your sanitation, package and put it down to a lesson learnt about storing yeast, in the fridge until needed.
