    I had the same problem on one (secondhand) keg. Every time I removed the disconnect it would have a little leak and I would have adjust the position of the poppet to make it seal properly. Replaced the poppet, all good now.

    I have never let them really swell up after a good smacking. As soon as there is any increase in size I pitch them. The thought of opening a very swollen pack leaves me with images of the yeast spraying all over me, and the fermenter, and everything else nearby.

    Your nose and your palate. Brew it, if you like it, do it again. If you find it may not be up to your expectation, then try a Belgian Saison.

    Still can't decide if I love or hate wheat beers. My only suggestion is cut all spices and let the yeast you choose do its thing. Work on it from there.

    Maybe I could use some Fowler's Vacola jars, I have boxes of them. Of course I'd give them 60 minutes in the old Fowler's boiler (stainless version that goes with the jars) that is current being use as my HLT.

    I just happen to have a few packets of dried yeast in the fridge. Due to a current abundant supply of liquid yeast atm, looks like it will be a long cold sleep for them.
