    Bellevue Kriek

I tired this beer at the Belgian beer cafe on the weekend, and was one of the best beers I must say I have ever tried, though GMK's Boston cream ale is still right up there. Crisp, tart and refreshing, and didnt get overpowering after 5 or so. However, what bottlo would I get this beer from? I...

    Hello Boys

Hi guys! Have I missed much? I've been off doing things with cars and hotrods and holding off on the brewing, somewhat due to the waistline, but may drop a couple of barrels of cider down soon. Hows everyone been? GMK you still alive?

    Cider

lol no offence taken mate, but my post was mostly in response to Pumpy's post. Theres alot of misinformation about cider floating around the net, mostly it seems from the states from "experts" who make "hard cider". I try and nip it in the bud whenever I can.

    Cider

Leaving ciders to brew on their own is not "ignorance", they are fermented using the wild yeasts found in the apple itself. They are just as viable a method of fermentation as using a cultured yeast. Blends do not always yield the best results, single variety cider are just as tasty, the key...

    Apple Cider Kit Modified.

Try the same sugar levels as black death but use an ale yeast, most of them dont do much beyond 8%. Multiple racks will stick the ferment too, so do that when your gravity readings look about right for you after secondary. I did one for my wedding called old rosie, based on apples and...

    Apple Cider Kit Modified.

if you want to make a nice cider there are some orchards in Vic that sell proper cider apples, looke for varieties such as Kingston Black or Bulmers Norman, they IMHO, make the best scrumpy. Pink Ladys like most of the varities we get here are dessert apples, nice enough, but wont yield a...

    Apple Cider Kit Modified.

Lactose is great, except you will find that ciders can actually eat lactose through their lactic acid bacteria, which is almost always present in a cider. End result is it breaks it down and over time you are back to where you started with the taste. Dont use splenda or any artifical sweeteners...

Cider - Secondary Ferment Not Working?

Blackrock kits are ok, but not even close to a decent method of cider making. Best results are from pure store bought juice and yeast. Yep you can use a wine yeast, i recommend sweet mead yeast for a sweet cider, or you can do what I do and use ale yeasts, which work just fine. Alternatively...
