Thanks for the reply! I agree, sanitation shouldn't be an issue. I'm guessing the oxidation is the big reason for it. That's really why I asked, because I thought we wanted oxygenation pre-fermentation. I also agree it's not a big deal to purge the air. I'm just a curious mind, I guess :) -Joe
