The last 5 or so brews I've done at home has been using the oven. I mash 3kg+ of grain in 8-9L of water for my partial 55L batches. I use a 20L SS stockpot I get the mash temp right on the stove 1st then transfer into a preheated oven. I set mine to 70C and stir every 15mins & check the heat...

I dont have a prob with the diacetyl (butter like taste/smell) As I do D-rests. but I do get a strange taste clove/sharp taste. Almost (but not quite) like an oxidised taste. Its NOT an infection people- I'm super clean/serial. And I dont have a problem with any other strain. Plus, the taste...

+1 for sure I got a twang in all my beers with US05/WY1056 no matter what the pitch rate, temp, SG, grain bill, rack or no rack...they all had the same taste/twang. Other yeasts worked. But every time I went back to US05 I had the same result. I guessed it was just 'me' because everyone else...
