    I'd press it and use ec1118 or uvaferm43. 2226 might work. But these 2 are better at stuck ferments

    Cool. What did you pick? It has been an awesome year so far everywhere in SA. The destemmer moved round a lot! We ended up bolting it to a frame we made and bolted the frame onto the the fermentor. At the moment it is hand operated, but next year we're going to place a motor on it!

    I dont think it makes any difference how much you spray in the type of weather they are having. I think we you are getting 50mm a day nothing will work, well apart from just giving up a drinking a beer!!!

    I'm doing the same. Im about to head up to Clare to 1/2 of Shiraz. Probably the thing I will do different is not add so2 till after MLF. And im not using new oak. I'm trying to control the temp by freezing large 20l cubes and sitting hem in the ferment I'm creating a blog for it it at hugewino...

    With the weather Im seeing up there you'd be hard pressed to get any more ripening. Im guessing there isnt much leaf coverage on the vines.

    Hi Does anyone know what size thread is on the valves that you can get for the 1000L red open wine fermenters? It is the valve and screen one. I'm trying to find a 19mm hose tail to go on the valve, but am not having any luck at all! Cheers Hugh
