    Steeping. I have a "friend" who gets me the grain 98% alcohol base so it does pack a nice warm punch to the gullet. My wifes extended family are Italian and very traditional in food prep so I have been blessed with a good solid recipe that keeps everyone happy.

    I live in the Sutherland Shire of Sydney and have no outlet to purchase 'wax free' lemons for making Limoncello as they need to be of a certain quality that I can be happy to use. Unmarked large Meyer lemons or similar would be ideal but really just happy to take what I can get at this stage...

    Any recommendations on a yeast substitute for this kit? If so what would be the overall outcome? Just saw the same question posted in another thread and was curious myself as to what my options would be seeing as though this is by far my favorite brew at the moment.

    +1 For the coopers DIY kit. It's how I started and I can definitely recommend it. PET bottles are good for a few batches just don't use really hot water when rinsing. Welcome to the hobby. It is addictive and replicating the same results will only add to the enjoyment!

    Thanks for the replies. I obviously left out the fact that after using the pink stuff I used idaphor for sanitising. So yeah all good with cleaning.

    Had a second whiff of the bottled stuff and nearly spewed. All bottles tipped out and already and put down another batch after a thorough wash and sanitizer that I started last night with leaving "pink stuff" in the fermenter along with all the gear I used. Fingers crossed the new batch goes...
