Tips for improving a wheat beer

Wheat beer is my favorite beer to brew.....I almost lost two 60L fermenters full tonight trying to lift the suckers out of the freezer... Luckily, i managed to save both of them. I probably prefer the one I pitched with a new vial than the one I repitched with my last yeast....but I really did...

    Beer flat at bottling

Meybe it's also got something to do with the surface tension of the beer ....I've also noticed while bottling beers that some seem quite frothy and others not...this sometimes seems to carry through to the beer when you open it to drink....I wish I knew why....but there certainly seems something...

What's the best addition to your brewery?

+1 for the tough 5L measuring jug...Although from memory it wasn't cheap, it was a great investment. I use it constantly, for water transfer, wort transfer, recirc, cleanup...even good for scooping out grain from the brew barrels. It's amazing how often you need one of these suckers...I've got a...

    Autolysis- can it be saved?

I doubt you have autolosis, but if your getting awfull aromas from your fermenting 3068 I'd say this is pretty strongly pointing toward your yeast preparation being spoiled somewhow, and other unwelcome guests are at play. You want to be make sure that it's not just some sulphery foulness that...

What is your strongest all grain brew EVER?

I hit OG 1.11 once on a RIS - after an extended boil - and that's grain, no sugar. Unfortunately it didn't attenuate very well and ended up very sweet. Pours like motor oil. I still have three boxes of the stuff under my house. http://www.brewtoolz.com/recipes/1945-old-jarrah-imperial-stout

How many times cultured? Recycled Yeast.

I usually do around 3, ie I try to brew in cycles doing three beers normally ascending in ABV with the same yeast. Normally the second pitching is (far) more vibrant than the first, but strangely it doesn't always continue, I would have thought that the third would be better again, but many...

    I wonder who?

Very sorry to hear about this whole story and those that have been affected. I have to say that I've been buying my ingredients from CBC for at least a couple of years, initially directly from his house, and later from his Dandenong factory. Personally, I had always been happy with the service...

    Top 20 craft beers

Good on Moon dog for getting two gurnsies there...Who would have thought such an off beat brewery would have had such an effect. I haven't tried any Hopdog yet, but will be looking out for it.

Should i Cold crash a hefe?

I generally don't cold crash, mainly because I find that as long as I give the beer a few days to settle after fermentation is done, then enough of the yeast will settle out naturally by bottling time - and then it's already at a temperature good for bottle conditioning to begin. I've made the...

    first wheat beer

If you want to keep it simple, and perhaps you plan on doing further similar brews - I'd suggest leaving out the honey and packet yeast. This will simplify your base ingredients and allow you to more easily understand which of your ingredients are contributing to the flavours in your beer.
