    Mad Brewers Hoppy Hefe

I tried it because I always try a Mad Brewers if I find one that I haven't tried and I have enjoyed all that I have tried up until this one. I wouldn't even tip most of a Toohey's Red or a VB down the sink and I definitely wouldn't spill a drop of a good IIPA. I 'complained' about it because I...

    Mad Brewers Hoppy Hefe

Didn't taste like a Hefe to me.

    Mad Brewers Hoppy Hefe

I would say a clone of this would be fairly simple. Get 2 buckets of any hop, stick one bucket in late in the boil then dry hop with the other bucket. It's not gonna matter what else you put in the brew because you aren't gonna taste it. Just don't forget to use tongue numbing quantities of hop...

    Mad Brewers Hoppy Hefe

Tipped his one down the sink. Didn't get any bitterness just a mouthful of hops. Something similar to chewing a hop pellet then washing it down with water, disgusting.

2 Metres Tall Company - Preservative Free Cider And Real Ale.

From 'The Perfect Beer', Apparently he treats every batch like a vintage. Daddo mentioned to him that beer making is all about consistency and he replied that apparently that is the biggest accusation that can be levelled at him as a berwer. He reckons 'consistency is a very importent criteria...

2 Metres Tall Company - Preservative Free Cider And Real Ale.

Perhaps the ciders are more up his alley due to his background as a winemaker. I think he cut his teeth in Europe making wine then came to Tassie with the idea of setting up a winery but was inspired to make beer instead by the surrounding hop farms. It was a while back I tried the dark ale but...

2 Metres Tall Company - Preservative Free Cider And Real Ale.

I tried the Huon Dark Apple Ale and struggled to finish it, which doesn't happen often. I saw an interview with the brewer on the 'Perfect Beer' show hosted by Andrew Daddo, he's definitely out there. A brewer that doesn't believe in consistency, he reckons all his batches are different from one...

    Too Much Carapils

He might of changed his mind since it may be worthwhile bottling after all. I'll try to be more diligent in future anyway, just for the hell of it.

    Too Much Carapils

Is it going into bottles or keg?

    Too Much Carapils

I want a scientific explanation for this.

    Too Much Carapils

According to the .pdf from the Briess webpage, their carapils can be steeped or mashed and is devoid of enzymes. The weyermann site suggests their carapils use to range 5-10% but can be used up to 40% of the grain bill, so perhaps it wont have a ruining effect. Briess on the other hand suggest...

    Too Much Carapils

I used to add dextrose to my extract brews so they finished lower but was replacing LDME. My all extract beers were finishing a little cloying and high. The dex certainly had a positive effect on my beers producing a drier finish, 20% of fermentables as dex worked for me. Perhaps the dex will...

    Too Much Carapils

Well I don't know really what's best to try and balance it out. Perhaps adding some dextrose, 800g or so may help to bring your FG down a bit. Maybe you could boil up some hops with the dextrose to add some more bitterness. Then dry-hop with some more saaz after fermentation has slowed to put...
