I've had to replace my tap due to erroded seal but other than that it's made some great beer. I've been happy and yes, the positive air pressure of the fermentation gasses keep it from oxidation
I've made some great kit brews. I always use temp control, lower end of fermentation reconditioned (16 deg.cel) for ales, DME, dextrose and never came sugar. Also dry hopping really adds so much additional complexity. I also hydrate my yeast before it goes in. That's my tips..
I'm making a double batch today. 23 X 2 litres. I'm thinking..

2kg dextrose
Brew at 10 degrees temp. Control fermentation for about 2 weeks, or untill stable FG.
Dry hop with 50gm or galaxy and Amarillo.
Bottle and let sit for 2 months.
What do you all think, have you made this...
I had a similar situation last week. I bottled too. I feel it carbing in the plastic bottles but I'm worried that they will explode! All my brews have always had a much lower FG. I'm sure that my yeasts were not healthy before I put them in. I used older salfate s04.
I've just upgraded from the coopers 25l DIY kit to the 60l kit. I've doubled cerveza coopers kit ingredients and used 1kg dme and 1kg dextrose. With two dry yeats provided. Taking a while at 16 deg cel but is getting to 1.005 after one week. Only thing I've added additional was 100gm Amarillo...
