    Mixing ingredients - best practice?

    I add hot water to the liquid malt extract to dissolve it, then add the other ingredients, then top up with cold water to the required volume, then stir like crazy and pitch the yeast. Never had a problem with the ingredients not mixing properly.

    The festbier turned out quite good! The clarity isn't great which I think was caused during the transfer to the bottling bucket, the siphon filter dragged through the trub and sucked up particles that were smaller than the filter mesh. Onwards and upwards, it's all part of the learning process!

    Absolutely! I have enjoyed building my own recipes, and even with extract I can still create most styles using additional steeped grains. Another advantage is that I can now use a medium stockpot on the kitchen stove instead of setting up the urn outside (not fun in winter...).

    Brewday and what is everyone brewing currently?

    In the fermenter is my take on a festbier, using extra light DME, a bit of melanoidin and carapils, with Tettnang for bittering and flavour. I'm using a Kolsch dried yeast, but the temperature is 35 C here so plenty of frozen water bottles being used to keep things in check.
