    Chinese Hops 2010

Hi Folks, For those interested, Graham Sanders is organising a bulk buy of Chinese hops again for the 2010 crop. Since he cannot organise this on AHB, he is organising it here: http://www.homebrewdownunder.com/index.php?topic=1644.0 Berp.

    Don't Underestimate The Lagering Process..

Next time, you should ferment, carbonate and THEN cold condition. Berp.

Continuous Pumping Of Fermenting Wort To Reach Fg Faster?

I've heard of the big boys stirring their fermenters by using a vertical temperature gradient that creates convection. The temperature gradient is reversed whent he desired FG is reached to flocculate the yeast out quickly. I also heard of one homebrewer on HBD who did an experiment where he...

    Question For The Hopheads

Yes there is. At least there are infections that will take months to develop any outward signs (not necessarily lay dormant). I have had experience with Brettanomyces (wild yeast) that develops bottle bombs over about 4 months. First signs are increased carbonation but there is no sign in the...

    Question For The Hopheads

Slowly increasing carbonation over a few months sounds like an infection. Since you imply this is only happening to your dry hopped beers and not to other beers (is this right?), you might be introducing the infection with the hops? I suggest you just drink up your IPAs within 3 months Berp.

    Acetaldehyde In Aroma

Three common ways to get acetaldehyde: 1. oxidation - too much oxygen gets into the beer and effectively reverses the fermentation one step 2. Young beer - yeast has not quite finished the job yet, so just be patient and it should subside after a few weeks 3. Too high a fermentation...

    Beer In Space

Smudge and Screwtop: your cheques are in the mail - thanks :D I gave the talk at a local event in Townsville a few weeks back. ABC local radio picked up on it, and then a few other ABC radio stations around Oz. Then ABC online, who wrote the article. Anything that increases the profile of beer...

What Are Your All Time Fave Gigs?

Small world - I was there too. The thing I remember was that the owners decided to put the stupid disco music on even before the clapping had finished for the last song. Most memorable gig for me would be one with Henry Rollins at the Paddington Town Hall in the early 90s(?) Someone threw an...

    March Pump Substitute

I use a standard aquarium pump to recirculate the mash and to pump wort out to the boiler when sparging. I don't use it to pump boiling wort around. It sits in a bucket of water, since it is designed to be cooled that way. It cost me $70, with my main concern that it had the juice to pump up...

Bjcp Certification In Oz ... Whats The State Of The Union?

I ran a few of the early exams. The BJCP were very flexible in assigning proctors for these exams. Obviously there were no national judges available so a few of these exams were run using either myself or local professional brewers as proctors. I am pretty sure that the BJCP would be just as...

    Wild Fermented Lambic

I have never wild-fermented myself. But I remember a professional lambic brewer telling me that the critical thing is to make sure the temperature stays at or below 16C for fermentation. Higher than that and the balance of bacterial to yeast activity gets out of whack and you end up with...
