    For the record, I've been using a Corona mill for over 20 years, never adjusted the gap & won multiple prizes with the beers I made out of it.

Pleh. Adding extra xtal during ferment (to combat a thin insipid irish red) is almost a brew day in itself. Lesson learned... Gladfields redback is not even a partial sub for xtal.

    I've recently started dabbling with W. Cara-Amber. It's not much use at a few percent, needs to be closer to 10% or more.
    There are dozens of malts that fall into the 'crystal' or at least caramel spectrum. They generally offer different levels of complexity, and need to be used in certain ways to get the most out of them. I feel your pain, but the reward should be worth it.

    Once you get past the 85 pages, hopefully you will realise that RIMS or Brau/Robo/GF is a far simpler way to go - where you're 80% likely to get it right rather than 20% likely.
