I'm a homebrewer. I hate that the nationals in Australia are called the "Amateur" brewers. It should be home brewers, not amateur. But then again, that's not all I hate about that competition........

Another thing to mention about the 90min boil is that you can also achieve more kettle caramelisation in the process which can be a good thing if that's what you're after. Personally, I also want a 90min boil to drive off any precursors to DMS which is why I do it for anything containing those...
If I remember correctly, the yeast used for the stout is the same as for the Pale Ale and Sparkling Ale. Therefore, you're better off getting the yeast out of the Pale Ale bottles as they've been less "beaten up" in the fermentation process and, due to the lower alcohol, have a better viability...

It's a good water sanitiser for reducing yeasts in drinking water and you can use it as a sanitiser for your equipment.

I've mostly used Iodophor but I've also used The Country Brewer's Liquid Sanitiser (phosphoric acid) a couple of times. Both are excellent and work well when mixed to the right amounts. I will be switching to Star San though for when my current bottle of Iodophor runs out. No particular reason...
